Our goal has never been to invent the next great dish, or follow food fashions, just serve real food with great flavour. Synge&Byrne has always been about championing traditions while experiencing new adventures in food. We aren’t tracking trends to keep up with the food fashions. We are focused on tradition, integrity and quality of our food. Often looking back to our traditions, our Mothers and Grannies, real food from real local traditions that have been around for centuries, then bring them to our customers and create a new generation of memories. We mix our traditions with the new tastes and influences that are becoming part of our culture, always adventurous while remembering our roots. We find and promote great food with passion, supporting a mission to educate with a down-to-earth attitude. 

We bake daily in our own bakery, following the traditions that have been handed down for generations, to ensure that our sweet treats and baked goods are unique to us and the very best we can offer. 

We are on a mission to radically improve the quality and flavour of food everywhere so we fanatically tinker with what we offer to improve constantly. Working with as many local Artisan suppliers as we can, supporting growers and suppliers that work directly with us while consistently moving towards a menu that is 80% wholefood plant based we ensure that every visit is a new food adventure in Synge&Byrne.

Our head baker Anna, supported by her hard working team, are in our bakery from the crack of dawn producing our delicious products to hit the stores fresh every day. Each day we hand make an extensive range of cakes and confectionary tray bakes. We make everything from the old school favourites of apple tarts to carrot cake and chocolate brownies to new adventurous bespoke products, plant based alternatives and seasonal favourites. It has always been our aim to provide real quality ingredients, true value and exceptional products for our customers.

L’ARTISAN

Just at the time we were developing our plans for the first Synge&Byrne Jose called in to our Newry office with some samples of his (now famous) Nata’s. He was just setting out on his own journey in the food business. Now all of our Nata’s, sausage rolls, pies and quiches, are produced by L’Artisian foods the family run business that is headed up by Jose and his wife Lucia.

All of their pies, quiches and sausage rolls, Nata’s, Vegan rolls and tarts are hand crafted in Portadown using the very best of local ingredients and have won numerous Great Taste and Blas Na h’Eireann  awards in recent years.

Food Provenance

Despite being a geographically widespread business we strive to ensure that we are constantly developing strong local relationships that help us to have much greater control of the ingredients that we use daily. We source our hand crafted breads from local bakeries around the country, using traditional bloomer and Sourdough in all of our Cafes. All of our yeast breads and sourdoughs contain only natural ingredients, no chemicals, yeast enhances, improvers or preservatives….just proper bread. Although our fruit and Vegetables come through food service suppliers our purchasing team are always pushing for local and seasonal where possible, supporting the seasonality of our menus and the soups, hot foods, salads and sandwiches in our Deli counters that change daily.

We are committed to supporting the local communities that we operate in and are always on the lookout for local artisan suppliers that can join our supply chain. David, Grace, Jeff and the whole team at Java Republic have been with us since the beginning, supplying, training, supporting us and our teams all along the way. They are truly our partners in Coffee and share many of the same values and like us are committed to a better way of doing business. Java Republic developed the world’s first purpose built carbon neutral roastery and offer Irelands most exceptional coffee and selection of organic teas, they ethically source the best beans and hand roast our own specific blend of coffee bean and supply our amazing range of organic teas.

All of our fantastic coffee’s and tea’s come from these guys and though the quality of their sourcing and training we maintain the highest standards across all of our cafes.
